Meal Plan Monday- Crockpot Week!




School has started, soccer has started, and our schedule just seems to get busier and busier! So, this week I am going to be cooking in the crockpot!


I know many moms (or dads) are in the same situation and crockpot cooking has seemed to be in a lot of conversations I have heard this weekend. So, here is my crockpot menu for this week! It is going to be so nice to not worry about getting supper started in the evening when the baby wants a nap, when my oldest needs to get ready for his soccer game and when I am starting to feel my energy get zapped!

Mexican Cream Cheese Chicken- I just recently found Crockpot Girls on Facebook and I am enjoying all the recipes and ideas the members are sharing! This recipe comes from them, so you may have to "Like" their page to get to this recipe!



Slow Cooker Meatballs- Just throw some noodles on the stove when you get home and it's a meal!


Sausage and Egg Breakfast Casserole- This reminds me of the casserole we eat on Christmas morning! Going to have to try this!


Slow Cooker Pork Chops- This looks really good! I think it will go great with some veggies and mashed potatoes!


Applesauce Chicken- I have applesauce in my refrigerator that needs to be used, so this is perfect timing!


Ham and Pineapple- This is a family favorite which usually gets cooked in the oven until warm. I am just going to throw it in the crockpot on low until warmed! Serve with mashed potatoes! Yummy!


Only 6 dinners this week, as we have a family celebration this Saturday! I love it when I don't have to cook!! Everyone have a great week and a great Labor Day Weekend!!!

Meal Plan Monday

This week my pocketbook is stretched to the limit. August is a horrible month for us! With back to school, a birthday, tags and taxes due and a HUGE electric bill thanks to almost a whole month of temps over 100 degrees, there isn't much room left for anything else. So, we are being very strict about our meal planning and going to make use of our pantry and freezer items we already have!



Here is what we are having for dinner this week...oh and BACK TO SCHOOL for us on Thursday! I'm just a little excited!

Skillet Chicken, Brown Rice and Vegetables- This is in our menu a lot, but it's delicious and super healthy. I will try to get some step by step pics of it up for next week!


Sloppy Joes, Chips, Smoothies


BBQ Cups- These are like Sloppy Joes except you add bbq sauce, ketchup and a little brown sugar to your hamburger and then serve over biscuits!


Pancakes, Sausage and Eggs


Chicken Breasts with Honey -Balsamic Glaze, Veggies, Mashed Potatoes


Pulled Pork Sandwiches, Baked Beans, Chips


Sandwiches (Peanut Butter/Jelly or Turkey) I know...we're fancy!

Frugal Friday Tip- Don't Throw Those Nectarines Away!




I type the words, Don't Throw Away, out of shame. You see, I just threw 3 rotten nectarines away, wasting about $2.00. I could have done quite a bit with that $2.00. I could have rented 2 movies. I could have went and bought my kids ice cream after their first day of school, or even paid for a shirt on clearance at Target. But instead, I threw it away! *Smacking myself on the forehead*

So, out of frustration, I give you this Friday's Frugal Tip- Don't Throw Anything Away!


Here are some ideas of what you can do with that one potato you have leftover or those 3 nectarines that aren't quite ready to throw away! *Smacking myself on the forehead once again*



*Have a few vegetables leftover from dinner? Take them and put them in a gallon size freezer bag. Keep adding those leftover vegetables until you have enough in your bag to make vegetable soup or to add to your roast!



*Potatoes- Shred them up to make hash browns!



*Fruit- cut up, flash freeze and bag them up. Use for smoothies or in pancakes!



*Bananas gone brown? Just stick them in the freezer. You decide if you want to cut up or just stick the whole thing in...it doesn't matter!



*Bread-use day old bread for croutons!



*Juice from Canned Fruit- freeze in ice cube tray and use for smoothies! (Thanks Annette)



*Pasta Sauce- freeze it and use for that next spaghetti dinner!



*Onions and Peppers- chop them up, freeze them and then just break off how much you need!
