Meal Plan Monday- Crockpot Week!




School has started, soccer has started, and our schedule just seems to get busier and busier! So, this week I am going to be cooking in the crockpot!


I know many moms (or dads) are in the same situation and crockpot cooking has seemed to be in a lot of conversations I have heard this weekend. So, here is my crockpot menu for this week! It is going to be so nice to not worry about getting supper started in the evening when the baby wants a nap, when my oldest needs to get ready for his soccer game and when I am starting to feel my energy get zapped!

Mexican Cream Cheese Chicken- I just recently found Crockpot Girls on Facebook and I am enjoying all the recipes and ideas the members are sharing! This recipe comes from them, so you may have to "Like" their page to get to this recipe!



Slow Cooker Meatballs- Just throw some noodles on the stove when you get home and it's a meal!


Sausage and Egg Breakfast Casserole- This reminds me of the casserole we eat on Christmas morning! Going to have to try this!


Slow Cooker Pork Chops- This looks really good! I think it will go great with some veggies and mashed potatoes!


Applesauce Chicken- I have applesauce in my refrigerator that needs to be used, so this is perfect timing!


Ham and Pineapple- This is a family favorite which usually gets cooked in the oven until warm. I am just going to throw it in the crockpot on low until warmed! Serve with mashed potatoes! Yummy!


Only 6 dinners this week, as we have a family celebration this Saturday! I love it when I don't have to cook!! Everyone have a great week and a great Labor Day Weekend!!!

Meal Plan Monday

This week my pocketbook is stretched to the limit. August is a horrible month for us! With back to school, a birthday, tags and taxes due and a HUGE electric bill thanks to almost a whole month of temps over 100 degrees, there isn't much room left for anything else. So, we are being very strict about our meal planning and going to make use of our pantry and freezer items we already have!



Here is what we are having for dinner this week...oh and BACK TO SCHOOL for us on Thursday! I'm just a little excited!

Skillet Chicken, Brown Rice and Vegetables- This is in our menu a lot, but it's delicious and super healthy. I will try to get some step by step pics of it up for next week!


Sloppy Joes, Chips, Smoothies


BBQ Cups- These are like Sloppy Joes except you add bbq sauce, ketchup and a little brown sugar to your hamburger and then serve over biscuits!


Pancakes, Sausage and Eggs


Chicken Breasts with Honey -Balsamic Glaze, Veggies, Mashed Potatoes


Pulled Pork Sandwiches, Baked Beans, Chips


Sandwiches (Peanut Butter/Jelly or Turkey) I know...we're fancy!

I can't believe it's Monday again-last week seemed to fly by and the weekend was WAY too fast!

Chicken Skillet: I just thaw out chicken, sprinkle with seasoning, and cook it in the skillet with Pam spray. When cooked through, cover with favorite cheese and cover. (I use Provolone). Brown rice and Veggies

Meal Plan Monday!






I'll admit it...I've been BAD at meal planning for awhile. You see, where I live it's been the average of 102 degrees everyday! Who wants to cook when even turning the stove on makes it hotter in your house? So, we've basically ate sandwiches and sandwiches for the past several weeks!


However, school is starting and my husband is griping...so, I better start cooking again!

Monday- Spaghetti with Meat Sauce
Tuesday- Coupon Class (boys on their own)
Wednesday- Skillet Chicken w/ Cheese, Rice, Veggies

Meal Plan Monday! Great Kid Recipe Link!


I am on a mission to lose weight! I am now 10 pounds lighter than when I became pregnant and trying to lose another 20 pounds! My husband and I sat down and decided that we were willing to spend more on groceries for a little while so that our WHOLE family can eat healthier! It may take me awhile to find dishes to eat, match coupons and sales to those items and get going, but I have faith that I can cut it soon! We will also be planting a big garden, so that will help with produce costs! I will guide you to any recipes I find that look good! Please share any healthy recipes you have too!

These last weeks have been crazy due to Colic Treatments and family issues! Hopefully I can get back into the kitchen and do some cooking and more importantly...save us some money!

I don't know why, but I feel like these colder days are going to be a distant memory soon, so I am in the mood for soups, chili and more soup and chili! Don't think my family will be thrilled if I cook that every night though!

Meal Plan Monday-Gluten Free Meals!




Time to start meal planning again! I still have a few frozen meals left from my pregnancy but my sensitivity to gluten has started again (weird how it went away with pregnancy) so I am trying to cut that out of my diet to hopefully let my stomach heal! So, lots of protein, fruits and veggies back in the meal plan-a good thing!!!

Pot Roast and Veggies- *TIP-add sweet potatoes to your roast! I can't tell you how yummy it is!!!

*Healthier* Pumpkin Spice Muffins!

I have been wanting to try these muffins for months after my friend posted the recipe on Facebook, but hadn't gotten the chance. Now that I am preparing meals and snacks to have around when baby comes, I thought it was the perfect time!

Pumpkin Spice Muffins

Ingredients:

1 box Spice Cake- I just recently got mine on sale at Dillons for $1.00!
2 Egg Whites
1 Can Pure Pumpkin
1/2 Cup Water

*I added some Pumpkin Pie Spice and Cinnamon too!

Optional: Raisins, Craisins, Chocolate Chips, Nuts

Set oven at 350 Degrees.


Dump Everything In Bowl- I added Raisins and Pecans to mine!

Mix-Let Baby have a lick!

Fill about 1/2 way in either greased pan or liners. Bake for 18-21 minutes. Mine were perfect at 18. Let cool, then sack up and put in refrigerator or freezer. If frozen, warm in microwave for about 20-30 seconds!

Meal Plan Monday - January 3rd-9th




Meal Plan Monday is BACK! Thank Goodness! I HATE not having a plan for my meals and just putting something together last minute!!!!! What a waste of time and money. Meal planning is one of the simplest tricks to spending less and I am definitely ready to start spending less after the holiday season.


I am going to break down my meals a little differently than before as you will notice below. I will post links to recipes as well and I don't post lunch since it is just basically me around here that eats anything besides a hot dog for lunch!

Pantry Challenge- Meal Plan Monday!




We are working really hard this month at putting as much money into our savings account, so I have decided to try the Pantry Challenge w/ a twist, for our Meal Plan Monday!

I went through my freezer, pantry and refrigerator and tried to see what I could come up with for 10 days worth of meals and here's what I came up with.
The twist?- I do have to buy a few things at the store, so I am doing a $20.00 Challenge for the week! That will include milk, bread, hamburger, biscuits and produce!

Monday- Shake and Bake Chicken, Frozen Potato Wedges, Salad

Tuesday- Flatbread Tacos w/ Ranch Sour Cream Sauce (these are delicious and we haven't had them in forever! I will take pics and post recipe on Wednesday!) If you are my Facebook friend, here's the link to the recipe.
