Italian Sausage and Rice Stuffed Peppers:
2 red and/or yellow bell peppers/halved lengthwise, seeded, deveined (we prefer yellow and orange peppers)
2 links fully cooked turkey or chicken sausage, halved, thinly sliced (don't' cut it until it's almost cooked or done cooking. You can choose whatever sausage you want really or substitute ground beef)
2 medium garlic cloves, minced (I just add garlic salt or dried minced garlic if I don't have any fresh garlic)
1 cup cooked brown rice (I just cook in the microwave)
3 tablespoons chopped fresh basil (Once again, I just use the dried basil usually)
1/2 cup pizza sauce
1/4 cup shredded mozzarella cheese
1.) Heat oven to 425 degrees. Place peppers, cut-sides up, on microwave-safe plates; cover with waxed paper. Microwave on high 2 minutes or until crisp-tender. Turn to drain.
2.) Spray medium skillet with cooking spray. Heat over medium-high heat until hot. Cook and stir sausage until browned and done. Add garlic; cook and stir 30 seconds or until fragrant. Stir in cooked rice and basil.
3.) Spoon sausage mixture in to pepper halves; place on small foil-lined rimmed baking sheet. Spoon marinara sauce over peppers; top with cheese. Bake 15-20 minutes or until peppers are tender and cheese is lightly browned.
